Christmas Energy Truffles
*makes about 2 dozen small truffles*
1 cup raw almonds or walnuts
1 cup medjool dates, pitted (Bulkbarn/superstore)
1/4 tsp cinnamon
1/4 tsp cardamom
2 tsp olive oil
1/4 cup raw almond butter
handful carbo chips (if desired- Bulkbarn)
1/2 cup shredded unsweetened coconut
1) In food processor with “S” blade grind almonds until finely ground. Add dates and spices. Grind to fine meal.
2) Add almond butter and olive oil, process again until mixed.
3) Add 1/4 cup coconut and carob chips (if dislike coconut- this can be omitted)
4) Roll into small balls and roll in shredded coconut (or hemps seeds/ almond grinds etc)
5) Store in sealed container in fridge up to 1 week
